Saved games and such

With games like MVC2 (unlockable characters) and VF (items for character) were would this stuff be stored. I know VF uses some sort of card system but what about MVC2? Would it store this info on the Dimm somewhere along with high scores or some piece of internal memory on the mobo somewhere? How does this work?

You lose highscores once you switch off on Capcom games, VF saves then untill you change games, unlockables are lost when you swap games like with MVC2 which is a cart anyway.
